Food & Wine recently bestowed its prestigious "best new chef" title on Madison Park's Conservatory's Cormac Mahoney, who personifies Seattle in ways that surely make New York media types salivate: Mahoney adores local ingredients (spot prawns!); reinterprets desperately trendy Southern dishes for a Northwest audience (Food & Wine specifically cited his deviled eggs with Dungeness crab); and stays in close touch with his hipster roots, routinely resurrecting Tako Truck dishes in a neighborhood that's largely food truck–free.
