Best Caesar Salad

What is and always will be great about the Georgian is the splendorous formality. The cuisine concentrates on Northwest ingredients, with dishes like wild Alaskan salmon with warm potato and wild mushroom salad and Kobe beef filet with oxtail “braisage.” High tea is served daily, and even the traditional dishes are made to sound fancy, like the artful Olympic Caesar salad—a pile of romaine leaves sitting on a long strip of aged Pecorino and topped by a single large cube of a toasted crouton.
