We sometimes have a hard time selling Pauline's to newbies. It has been around just long enough -- 25 years -- to marvel at, but not long enough to become timeless. Anyone who makes it to Pauline's with us, though, quickly understands our devotion. Pauline's makes pies with the kind of airy, blistery crusts that certain nameless high-end pizzerias are still struggling to master, and layers on toppings so local and seasonal that they're grown by the owner herself. Oh, and kids are welcome.
