Best Pizza

There's no reason a wood-burning oven couldn't be toted around the county, and that's exactly what TJ's Woodfire Pizza does--they have a brick oven mounted on a trailer; they bring wood and make pizza outdoors. Those not willing to follow them around can always go to their permanent weekend home at the Great Park Farmers Market. TJ's crust is beautiful, charred in just the right number of places, chewy and bready at once. The fresh mozzarella is well-drained and not gooey; the basil adds the required herbal, anise-y taste, and the tomatoes are tender.
