For those skittish about meats that don't hail from cows or pigs, there's no better way to try them than in sausage form, in which (delicious) parts are hidden in a tube and tucked away in a bun. The menu at Joe's boasts a variety of esoteric brats you won't find at Der Wienerschnizel—wild boar, ostrich, rattlesnake and rabbit, as well as duck and alligator, all spiced to perfection, wedged into a toasted roll, and topped with complementing extras such as caramelized onions, peppers and brown mustard. Though you wouldn't guess with each buttery bite, the sausages are one of the healthiest options at the cozy downtown Fullerton bar and restaurant, also known for its fair-inspired fare—including a deep-fried PB&J. Each sausage has a suggested specialty-beer pairing, making it a meal worth hunting for. $$
