In Ecuadorian lore, the Chimborazo volcano, the country's highest summit, represents Taita (Father), while the nearby Tungurahua volcano is considered Mama. In Minneapolis, Chimborazo wears the pants when it comes to South American cuisine. Lighten the mood when you step off of Central Avenue into the small, unassuming haunt, decorated with bright textiles and the lively sounds of traditional Quichua music. Try the llapingachos con chorizo (a combination of potato pancakes with rice, chorizo, eggs, and peanut sauce that comes together in culinary heaven) and the pescado o camarón encocado (mahi mahi or shrimp served with rice and sweet plantains in coconut sauce). And while we're on the subject of plantains, don't leave Chimborazo without one. Slightly crispy on the outside, with a sweet, soft center, they go down like candy. But save room for the real dessert, the tres leches—a three-milk cake topped with whipped cream and berries. Trust us: It's better than your Tungurahua's.
